Garlicy Mushroom Rice

So I only recently started eating mushrooms in the last ten years or so.  (I know, don't judge me).  Now I'm slightly obsessed with them. 

My kid loves rice and potatoes.  With all the things I know how to cook, he literally wants either of those on the side no matter what.  You're probably thinking I have to get creative, so we are not constantly having the same side dish, and you would be right.  I love experimenting with all of the different grains and various types of potatoes. 

This recipe uses basmati rice, which you can find pretty much anywhere.  It is slow simmered in chicken stock with fresh thyme and plenty of garlic.  Finished off with a dollop of butter, and it is to die for.  No more plain rice on the side!

Garlicky Mushroom Rice

Prep Time:  5 minutes
Cook Time:  20 minutes
Serves 4-6


2 TBSP olive oil
1 TBSP butter
½ medium onion, minced
2 stalks celery, chopped
4 cloves of garlic, minced
1 package of crimini mushrooms, stems removed and sliced
1 tsp salt
½ tsp black pepper
3 sprigs of fresh thyme
3 cups chicken stock

To finish:
Salt and pepper to taste
2 TBSP butter


In a heavy bottomed medium sauce pot, heat butter and oil until butter is slightly foamed up.  Add onion, garlic and celery and cook over medium heat until veggies are translucent. 

Add sliced mushrooms and continue to cook until mushrooms are slightly softened. 

Pour in the raw rice and work through until every grain of rice is coated with the buttery oil mixture and veggies. 

Add thyme sprigs, salt and pepper and pour in 3 cups of chicken stock. 

Cover and cook on medium high until rice comes to a boil.  Stir once and quickly put the lid back on, reduce heat to low and cook for about 15 minutes until all liquid is absorbed. 

Place 2 TBSP butter and work through gently with a fork, tasting and adding more salt and pepper if necessary.  Do not over work the rice!  Just fluff gently until the extra butter is incorporated evenly.

You will absolutely adore this recipe and it will definitely become a new side staple!
