Piggyback Brownies

These brownies are crazy.  Crazy DELICIOUS.  Like, you have never tasted anything that is so crazy.  BUT IT WORKS!!  I played around with this for 2 or 3 tries before I got it just right.

But guys................. THERE IS BACON in these brownies.  BACON!!! And oh my gosh does it work!  These brownies should come with a warning, they are so dangerously scrumptious.
I tempered the chocolate with the bacon fat - which sounds crazy - but have I ever led you astray before?  We both know the answer is no.

These brownies are salty, sweet, chocolate overloaded pieces of heaven.  They are totally worth the effort and I promise you, these will be your special occasion brownies that you will become famous for.  You have NEVER had brownies like this before.  They will change your life.

Piggyback Brownies

Prep Time:  20 minutes
Bake Time:  65 minutes
Total Time:  approx. 1 1/2 hours


2 sticks salted butter
8 oz bittersweet baking chocolate, chopped
6 oz semisweet chocolate chips
6 tsp of bacon fat/grease
1 cup of light brown sugar
1 cup of white sugar
tsp vanilla extract
1/2 tsp of salt
6 eggs
1/2 cup AP flour
1/2 tsp baking powder
8 slices crispy bacon
8 pretzel rods


In a cast iron skillet, fry up 8 slices of bacon and reserve the bacon fat.  Set cooked bacon aside on paper towels to cool.  

Preheat over to 350 degrees.  Line a 9/13 baking dish with foil.  Grease the foil with butter or PAM.

Chop the baking chocolate up into bite sized pieces.  Add baking chocolate, semisweet morsels, 2 sticks of butter and bacon grease to a double boiler.  Slowly melt ingredients together, careful not to burn the chocolate.  When melted completely, remove from heat and set aside.


In a large bowl, combine both sugars, vanilla extract ad 6 eggs.  Beat on medium speed until well combined.  Slowly drizzle in the chocolate mixture until completely incorporated.


Mix in the flour, salt and baking powder until well incorporated.

Fold in 6 slices of crispy bacon, chopped into small pieces as well as 6 pretzel rods broken up.


Pour in brownie mixture and top with remaining bacon and pretzel pieces.


Bake on 350 for 65 minutes or until toothpick inserted in center comes out clean.
